My os is corrupted and I dunno where the windows xp cd is for it.
So, I was going to buy a copy of Windows 7.
I would like to install it on 2 or 3 computers although it says 'it is licensed for one user'
What exactly does that mean?

It means you can install it on one machine only. It has an online validation that will check if your copy is genuine and your licence is not already in use.
You can get a family pack i think that means you have three licences with one install disc. Not sure on the different costs involved.
MS are still running their student scheme and companies often have reduced costs for Windows and Office etc so you can save money that way if you need multiple copies.

If it is an older PC then good luck installing it! It took me a week on my last computer. Came up with all sorts of "cd/dvd device driver missing" errors.
