If you just leave the settings as they are you will be fine.
The reason you are seeing more messages then ever are the Government have brought in a law where websites that use Cookies have to tell the user and allow the user to consent in some ways. Therefore, by reading the message and still accessing the site you are allowing that site to use Cookies.
Alot of people dont actually understand them - but there is nothing wrong with Cookies, they just hold small bits of information about where you have been on the web. This is useful for remembering your password like some browsers will do but also remembering what you have searched for etc..
Granted, it is also used to tailor advertising to you but most people ignore them anyway!
Hope that helps!

They're used a lot with advertising, tracking the type of content you browse and cross checking your age against email vendors when you sign in. All sounds a bit much but it means you see more relevant ads, even if you have cookies off you'll see exactly the same amount of ads but they'll be completely random

Very annoying - Was looking for a new microwave, bought one and then every bloody web site I visit, up pops a pic for the very machine! well, until I did a clear out!
You can chosse not to accept them, or limit to 3rd party, or clear when you close down your browser but the downside to that is when you return to sites like this, if you have it set to remember you, then it wont and you have to log in again. Not too much of a hassle if your user name and password is remembered, but it wont auto log you in like many people like to have.

Basically, the government and the media have made folk sh1t themselves about cookies when there really is no need
