I'm having my 1st go at making this delicacy, would you use smoked or unsmoked bacon in it?

I think it's down to personal taste...Personally I'd use unsmoked. I cooked a ham shank this weekend and was wondering what to do with the cooking stock / jelly......was probably going to make some pea and ham soup, Not any more! I've just looked a recipe for pease pudding up and I've got all the ingrediments.....wonder what it will be like with cold turkey

Doesn't matter as long as you have it hot, then cold, then from the pot 9 days old.

Noooooo Did you use yellow or green split peas? I reckon you probably used yellow, either way the taste will have been fantastic. This is a perfect example of why food manufacturers put artificial colouring in our food.
